Ok first of all, I can't start today because it's Memorial Day and nothing is open. Go me!
Secondly, I just read that the 5 ingredients exclude the following: water, cooking spray, salt, pepper, garnishes, and optional ingredients. Also, the title was a bit misleading. I was under the impression that these meals had 5 ingredients or less AND could be cooked in 15 minutes. However, that is not the case. It's either/or but most are both. Hmph! My first obstacles and I haven't even started. :P
Finally, if you have any recipes that fit the above criteria, please feel free to post them. If they are free of seafood and kid-friendly in addition to the above criteria, that would be awesome!!
Oh, I almost forgot...I'll also take and post pics if I remember.

It's true
I've decided to start cooking. Ever since I nearly burned down my mother's house when I was 18, I've pretty much stayed away from the stove. I've also managed to set an oven on fire and destroy the simplest of things in the microwave!
Most meals consist of nuked food, dining out, or pizza. When I do cook, it's hardly ever anything from scratch; my kids like instant potatoes, pre-made frozen chicken kiev, tv dinners, toaster waffles, ramen noodles, mac n cheese, and Chef Boyardee. Who am I to argue? I was a busy person...2 kids, 3 jobs, and school.
Oh you can mock me and call me a terrible mother but the fact of the matter is, I truely believe it was better and safer for everyone involved!
However, my situation has changed for now and so I've decided to take all this time that is available to me and start putting it to good use. The kitchen is just one area that I'll be focusing on. My boyfriend Chris is thrilled to pieces, he's quite sick of dining out whenever he comes over. I don't blame him, I am too! I'm not sure if he realizes this, but he WILL be helping me on this little adventure.
Since I have limited cooking experience I've decided to start out simple. While I was at the bookstore the other day I picked up a copy of "Coooking Light: 5 Ingredient 15 Minute Cookbook". This is the book that I/we will be using for conquering the kitchen and all of the fears that go with it!
My biggest obstacle (other than not burning down the house) will be getting the kids to try and, more importantly, LIKE the food. I will be posting the meals I attempt to make, how they turned out, my opinions, the kids opinions, chris' opinion (if he's here), any issues I ran into, etc. here in this little bloggy thing.
